Clean Eating Whole Wheat Banana Muffins

We all know that the modern diet isn’t very good for us which is why we, as a family, have adopted a cleaning eating approach to our diet.

Introduction

Have you seen how many chemicals they put in the supposedly healthy options?  It’s truly staggering.

In an effort to help my family and, in particular, my son who is Autistic, I have introduced a clean eating aspect to our diet.  I use the word ‘diet’ loosely as it is not so much a diet but a way of life.  It goes hand in hand with my war on chemicals within our home.

Through my blog, I would like to share the recipes and the products that I purchase and, hopefully, inspire you to a healthier lifestyle and reduce the chemicals in your life too.

Clean Eating – Wholewheat Banana Muffins

Makes 18

There are just 6 ingredients in these truly delicious muffins.  A very popular staple in our house.

Ingredients

260 g Wholewheat Flour

125 ml extra virgin olive oil or coconut oil

4 eggs (from our own happy chickens)

4 large ripe bananas – mashed

2 tsp baking soda

125 ml pure maple syrup

Method

Preheat oven to 180 C

Grease or line a muffin tin

In your food processor add the flour, oil, eggs, bananas, baking soda and maple syrup.

Process until well combined and smooth.  I try to avoid lumps of banana as my daughter doesn’t like it lumpy!

Spoon into the prepared muffin tray and pop into the centre of the preheated oven for 15-20 minutes (this may vary depending on your over, so I would check at 15 minutes).  They are done when a toothpick inserted into the middle comes out clean.

Put onto a wrack to cool at room temperature.

These will keep in an airtight tub for up to 5 days (I usually pop mine in the fridge but they do become slightly sticky towards the end of the 5 days but this does not affect the taste) if they actually stay around that long…..

They will also freeze quite successfully, just remove them 3 to 4 hours before eating.
